Some spices build the foundation of a dish, while others are the exquisite finishing touch that elevates it from simple to sublime.
Mace is undeniably the latter.
It is a key element of our Butter Chicken and Rogan Josh spice kits. We call it the Gilded Spice because it adds a touch of luxury to everything it meets.
Think of it as nutmeg's cooler, more sophisticated older sister. It has that familiar warmth but is not as sweet and has a subtle, peppery kick.
Mace is the lacy, red covering you find wrapped around a whole nutmeg seed, and it comes from the famous Spice Islands in Indonesia.
For centuries, this beautiful spice was one of the most valuable commodities worth more than its weight in gold and sparking trade wars between nations. From the Spice Islands, its journey took it across the world, becoming a prized ingredient in the grand kitchens of Europe and a fragrant staple in savoury Asian cuisine.
And it's not just about the taste. Traditionally, mace was used to help ease digestion. Even today it is used in high-end perfumes to add that luxe je ne sais quoi element to your favourite scents. This spice is a true multi-tasker.
Pro Tip
If you can, buy the whole mace instead of the pre-ground powder. Very easy to grind it up for use when you need it. Grinding it right before you use it releases a stunning warm and peppery fragrance that will completely change your dish.
