Rogan Josh is a classic Kashmiri dish from the mountainous north of the Indian subcontinent. ‘Rogan’ means oil and ‘Josh’ means passion, referring to the red colour and bold spices in this dish.

Tender, succulent mutton or lamb is slow-cooked in a rich, aromatic gravy made with a blend of Kashmiri spices. The flavors are deep, complex, and layered, with a subtle heat that lingers on the palate.  The smoky flavours of Kashmiri red chilli powder, black cardamom and fennel create that distinct flavour profile.

Kashmiri Dum Aloo - a melt in your mouth favourite made by gently cooking potatoes in spices, yogurt (optional), onions and tomatoes.

How to cook

  1. Marinate meat in Marinade Spices for an hour 
  2. Sear the marinated meat
  3. Make sauce with Sauce Spice Blend 1, onion, tomatoes and yogurt
  4. Add seared meat and Sauce Spice Blend 2, simmer and serve

Just Add

800g Lamb (bone-in pieces or diced), 0.5 cups plain Greek yogurt, 3 tbsp cooking oil, 1 medium tomato, 1 medium onion, salt to taste.

Cooking Tips

Make the most of your kits

  1. Kashmiri Rogan Josh is different from the Punjabi version which has a thicker sauce containing nuts and a different set of spices.
  2. If the sauce looks a bit runny, cook uncovered until it gets to a medium consistency.
  3. When adding the yogurt be sure to keep stirring quickly to prevent it from splitting. 
  4. Add some baby potatoes along with the meat to add body to the dish.
