Paneer Makhani or Vegetable Makhani

The SpiceCraft Butter Chicken Kit can be used to make a sensational vegetarian curry that will have even the meat eaters coming back for seconds. Traditionally the chicken is replaced with Indian cottage cheese called paneer; but you can use baby potatoes, cauliflower or sweet potatoes with great results.

The basic recipe for all substitutes is the same - cut up the paneer/veggies into chunks, prepare a marinade using the pack from the kit combined with some yogurt, marinade the paneer/veggies, chill for a bit and then grill.

Once the paneer/veggies are nicely grilled, use in place of the chicken as per instructions in the included recipe book.

Paneer Makhani

Ingredients -

  1. 750 gms of Indian cottage cheese known as paneer. Found in the cheese and dairy section in most supermarkets. Looks like tofu, but denser. Store in the fridge, but do not freeze.  
  2. 2 tbsp yogurt
  3. Marinade spice pack from the SpiceCraft Butter Chicken Kit

 

Instructions -

  1. Dice the paneer into 2 cm cubes   
  2. Combine marinade spices from the pack with 2 tbsp yogurt to make the marinade
  3. Apply marinade to paneer cubes so they are all coated evenly
  4. (Optional) Cover with cling wrap and chill in the fridge for an hour.
  5. Lightly grease an oven tray lined with foil.
  6. Place paneer on the tray and grill at 200C/180C fan/gas 6 for 10 minutes, turning once.
  7. The paneer cooks just as well on a fry pan on medium heat. Make sure to keep turning so it doesn’t stick to the base.

 

Your delicious paneer tikkas are ready to go into the spiced tomato sauce as per rest of the instructions in your recipe book.

Vegetable Makhani 

Ingredients -

  1. 750 gms of vegetables. You can use any or all of the veggies below.   
    1. Baby potatoes cut in half, or big potatoes cut into 2 cm cubes
    2. Cauliflower florets 2-3 cm size
    3. Sweet potato peeled and cut in 2 cm cubes
  2. 2 tbsp yogurt
  3. Marinade spice pack from the SpiceCraft Butter Chicken Kit

 

Instructions -

  1. Cover the potatoes cubes with lots of cold water in a medium saucepan, bring to the boil then simmer for 10 mins.
  2. Add in cauliflower florets to the potatoes and simmer for another 4 mins. Drain and leave to cool.  
  3. Combine marinade spices from the pack with 2 tbsp yogurt to make the marinade
  4. Apply marinade to potato, cauliflower and sweet potato cubes so they are all coated evenly.
  5. (Optional) Cover with cling wrap and chill in the fridge for an hour.
  6. Lightly grease an oven tray lined with foil.
  7. Place veggies on the tray and grill on grill at 200C/180C fan/gas 6 for for 20-25 minutes, until the potatoes are just done.
Tip: If the sweet potatoes start to get mushy before the baby potatoes are done, take the sweet potatoes out of the oven while the baby potatoes are still cooking. 

     Your delicious veggie tikkas are ready to go into the spiced tomato sauce as per rest of the instructions in your recipe book.
